Are you able to add a shock sensor to a evo-all in standalone for a 2015 F-250?

Seeing if a evo-all could also be used as an alarm on a 2015 F-250. The vehicle does not have a oem alarm.

Yes, please refer to this guide for alarm functionality.

Those trigger wires listed in that guide you posted are being used for lock/unlock input wires in the guide for the F-250.
Once evo-alarm is enabled, those input wires get canceled and become whatever the evo-alarm needs.
Will the device still be able to lock/unlock by a smartstart? Looks like the unlock wire becomes a starter kill output when evo-alram is enabled.
Unlock will stay unlock. Atleast, it should. Whatever is mandatory for starting and proper operation normally stays as is.
